City hopes to dispel radioactivity fears with water purity award

Bottled tap water from Fukushima has won an award for purity from the Monde Selection.

Fukushima City in Japan announced this week that its bottled tap water was not only safe to drink, but it had just received a prestigious international award for quality. The city hopes the news will help allay fears of lingering radioactivity in the city’s water following the meltdown of the Fukushima nuclear power plant in 2011 after the Tohoku earthquake and tsunami.

According to Rocket News 24, Fukushima’s tap water is bottled under the name Fukushima no Mizu, and this week the city announced that the bottled water had received a Gold Quality Award from the 2015 Monde Selection, an international competition that tests and awards the relative quality of different consumer products.

The mayor of Fukushima said in a press conference April 8 that people still mistrust the safety of Fukushima’s water and fear radioactive contamination even though he pointed out that Fukushima’s water has been routinely tested since the 2011 disaster, and since April 2011 the levels of the radioactive substance caesium iodide in Fukushima’s water have not been higher than in the water in the rest of Japan. The mayor shared the news of the Monde Selection award and said he hopes it will help put fears of radioactive contamination in Fukushima to rest.

In the most recent GH Beauty Lab face washes test, 4,512 data points were tallied to find the best facial cleanser formulas on the market.

How Does It Taste?

Fukushima: Japan approves releasing wastewater into ocean

Japan has approved a plan to release more than one million tonnes of contaminated water from the destroyed Fukushima nuclear plant into the sea.

The water will be treated and diluted so radiation levels are below those set for drinking water.

But the local fishing industry has strongly opposed the move, as have China and South Korea.

Tokyo says work to release water used to cool nuclear fuel will begin in about two years.

The final approval comes after years of debate and is expected to take decades to complete.

Reactor buildings at the Fukushima power plant were damaged by hydrogen explosions caused by an earthquake and tsunami in 2011. The tsunami knocked out cooling systems to the reactors, three of which melted down.

More than a million tonnes of water have been used to cool the melted reactors.

Currently, the radioactive water is treated in a complex filtration process that removes most of the radioactive elements, but some remain, including tritium - deemed harmful to humans only in very large doses.

It is then kept in huge tanks, but the plant's operator Tokyo Electric Power Co (TepCo) is running out of space, with these tanks expected to fill up by 2022.

About 1.3 million tonnes of radioactive water - or enough to fill 500 Olympic-sized swimming pools - are currently stored in these tanks, according to a Reuters report.

Is there opposition?

Environmental groups like Greenpeace have long expressed their opposition to releasing the water into the ocean.

The NGO said Japan's plans to release the water showed the government "once again failed the people of Fukushima".

The country's fishing industry has also argued against it, worried that consumers will refuse to buy produce from the region.

The industry was hit extremely hard after the 2011 disaster, with many countries banning the import of sea food caught off Japan's north-eastern coast.

The decision has also prompted criticism from Japan's neighbours. Ahead of the decision, South Korea's foreign minister on Monday expressing "serious regret".

Chinese foreign ministry spokesman Zhao Lijian also urged Japan to "act in a responsible manner".

"To safeguard international public interests and Chinese people's health and safety, China has expressed grave concern to the Japanese side through the diplomatic channel," Zhao said.

The US appears to support Japan's decision, however, saying it seemed to have "adopted an approach in accordance with globally accepted nuclear safety standards".

How safe is this water?

Japan argues that the release of the waste water is safe as it is processed to remove almost all radioactive elements and will be greatly diluted.

The plan has the backing of the International Atomic Energy Agency, which says the release is similar to the disposal of waste water at other plants around the world.

"Releasing into the ocean is done elsewhere. It's not something new. There is no scandal here," IAEA Director General Rafael Mariano Grossi said in 2021.

Scientists argue that the elements remaining in the water are only harmful to humans in large doses. With dilution, the treated water poses no scientifically detectable risk, they say.

While the tritium is radioactive, it has a half-life of about 12 years, meaning it will disappear from the environment over a period of decades rather than centuries.

Radiation from tritium can be ingested, however, which is why fishing industry groups are concerned about the risk of it getting into the food chain and being consumed through sea food.

The risk of this happening is not zero, but the scientific consensus is that it does not pose a threat to human health.

Scientists also point out that vastly more radiation has been released into the pacific by nuclear weapons tests carried out by the US, UK and France during the 1940s, '50s and '60s.

What happened in Fukushima?

On 11 March 2011, a 9.0 magnitude earthquake struck off the north-eastern coast of Japan, triggering a 15m tsunami.

While the back-up systems to prevent a meltdown at the Fukushima nuclear plant survived the initial quake, further damage was inflicted by the tsunami.

As the facility's cooling systems failed in the days that followed, tonnes of radioactive material were released. The meltdown was the worst nuclear accident since Chernobyl in 1986.

About 18,500 people died or disappeared in the quake and tsunami, and more than 160,000 were forced to leave their homes.

Released by Coca-Cola in 1999, Dasani caused a backlash due to claims that the company is making a profit from bottling plain-old tap water. According to their explanation of their manufacturing process, the water is drawn from local sources (with government approval), treated (or not treated) based on quality, filtered to remove undesirable taste, disinfected with ultraviolet light, sent through reverse osmosis to remove impurities (in the U.S. only) and enhanced with minerals including Epsom salt, potassium chloride and common salt to create its distinct taste.

Slogan: Natural Spring Water

Volvic water is collected from a string of ancient volcanoes in Parc Naturel des Volcans d'Auvergne in central France, where rainwater seeps very slowly underground through porous layers of lava down to a watertight granite bed. Its contact with rocks and minerals is what creates the bottled water's composition of minerals. The bottling system is fully automated, with water being transported through a stainless steel pipeline to a plant where it's bottled immediately without any exterior contact. The lack of post-spring filtration is said to preserve the water's natural character and purity.

Slogan: Untouched by Man, Perfect by Nature

This French brand of water was first sold in glass bottles and originated from a spring that was thought to have healing powers. The water is still sourced from the same spring at the Alpine Foothills, where it's naturally filtered through 800-foot-deep mountainous dips of sand and gravel. Recently, Evian has begun a series of environmental initiatives, including RecycleBank (an award-based company that gives participating households redeemable points according to the amount of materials they recycle) and financial support for the Ramsar Convention on Wetlands.

Brand: Smartwater
Slogan: Purity You Can Taste. Hydration You Can Feel.

This electrolyte-enhanced line of water, founded in May 1996, was initially only distributed in health food stores and independent retailers. By 2002, however, Smartwater was one of the top-selling brands of enhanced water, and widely available at large chain retailers around the country. Vapor-distilled (a process that removes salt and impurities) with added electrolytes, the water is purified using a scientifically controlled spin on nature's hydrologic cycle (the continuous movement of water on, above, and below the surface of the Earth).

The day Swaps met his match

The focus on Art Sherman, with stories that seek to flavor who he is and how he thinks as he prepares his horse for a run at the Triple Crown, zeros in on May 7, 1955.

A better date might be Aug. 31 of that year.

In the oft-told story, Sherman was an 18-year-old exercise rider for the famed Swaps, who won the Kentucky Derby that May. In the lesser-known story, he was also the exercise rider for Swaps for the famous match race with Nashua.

On a rainy Thursday morning in the Belmont Park barns, as daylight arrived along with two reporters, the 77-year-old Sherman told the story.

“I was on the trip” from California to Chicago, Sherman said. “We were like three, four days [on the train]. We brought a couple of extra horses. We had like six. I had a sleeping bag and there were three horses on this side of me and three on the other. In the night, they’d dip in their water bucket and hit me. I looked worse than the horses when we got there. Jeez, what a trip.”

The race was scheduled for Washington Park. It was owned by Ben Lindheimer, whose daughter, Marje Everett, would eventually take over the operation and later move to California and run Hollywood Park.

Swaps had won the Kentucky Derby, but had not entered the Preakness or Belmont.

“I don’t think they had the money” for the entry fees, Sherman said.

Swaps was owned by Rex Ellsworth and bred on his farm in Ontario. When he won the Derby, he was only the second California-bred to do so, following Morvich in 1922. When Sherman’s California Chrome won the Derby this year, he was only the fourth Cal-bred, following Decidedly in 1962.

“They [the owners] had horses coming up and they were always short,” Sherman said. “Your paycheck was always late. I made $75 a month the first year, $150 the second and $250 the third.

“I was living high on the hog. If there wasn’t a lady feeding me at the Big W Drive In, I would have been in big trouble.”

Nashua, an Eastern horse, finished second to Swaps in the Derby and then won the Preakness and Belmont. The question then was as national as the sport: Which horse was better?

So came the inevitable, a $100,000 winner-take-all match race, although Sherman said he was certain Swaps’ owners were paid nicely, win or lose.

The event was a magical attraction. Not only were these among the best 3-year-olds of their era, but there was the East-versus-West dynamic. There were also two of the best jockeys ever. Bill Shoemaker, who went as Willie then, rode Swaps and Eddie Arcaro rode Nashua.

A crowd of 35,262 showed up. National reporters swarmed Chicago. Odds for Swaps were set at 3-10 for Nashua 6-5. For once, gambling took a back seat to the purity of competition. A total of $175,000 was bet on the race, less than all the other races that day at Washington Park, except the first race.

Unknown to most, and an element that has stuck with Sherman to this day, was that Swaps had a foot injury and wasn’t anywhere near his best.

“He shouldn’t have run the match race,” Sherman said Thursday.

He said Swaps had an inch-long hole and abscess on the frog of his foot that they filled with iodine and cotton and covered with a leather pouch to keep dirt out. The frog on a horse’s foot is a triangular-shaped area that serves as a shock absorber when he runs.

“To me, [running Swaps] was kind of unbelievably dumb,” Sherman said. “Swaps was too much horse for Nashua.… One had natural ability. The other, you kind of had to beat the crap out of him. I watched Arcaro work on him. He was cutting him under the belly, doing everything.”

Arcaro later said that he had found a soft path on the track about four widths from the rail. He said he put Swaps there by breaking first from the inside and pushing Swaps and Shoemaker out to that soft spot all the way around.

“I just don’t believe that,” he said.

Nashua won by daylight and was voted horse of the year. Swaps raced no more that year, but healed up and won eight of 10 races in 1956, including six carrying 130 pounds. Nashua ran with 130 pounds twice that year and lost both races.

At the end of 1956, Swaps was named horse of the year.

All of which adds up to a nice story with sizable significance for horse racing, which is under attack by PETA and its hidden cameras and the New York Times and its anti-drug reporting, as well as suffering from the all-too-frequent horror of horses breaking down and being destroyed on the track.

Sherman, a man on the doorstep of giving his sport a positive and legendary moment in its history, saw Swaps run when he shouldn’t have, has never forgotten it, said he was devastated, and added:

“If my horse wasn’t 100%, I’d have no qualms about not running him. I’d never do that.

In Pursuit of the Perfect Bowl of Porridge

In 2015, Lisa Williams was vacationing in Scotland when she stumbled across a glitzy bagpipe procession and a line of people in aprons holding flags from countries around the world. She took a closer look, inquired around, and discovered it was a porridge parade, celebrating the contestants of a world porridge championship.

“And then you go into the village hall [where the competition is held], and it’s decorated in tartan and heather and with all the flags from all the people and their countries,” she says. “It was amazing. I was hooked. I just said to my husband that I want to take part in this. I want to do it.” Four years later, Williams returned to Scotland, and her porridge was crowned the best in the world. “When they called my name out, I was absolutely stunned,” she says.

Like Goldilocks chasing down that perfect bowl, Williams is among a dedicated class of professional and amateur cooks around the world who compete each year to serve the best bowl of, essentially, gruel. They gather in the small village of Carrbridge, Scotland, on the edge of a national park in the Scottish highlands, for the Golden Spurtle World Porridge Making Championship. Judges for the competition, which is split into “traditional” and “specialty” categories, are mostly recruited from the culinary industry, and rank each bowl by color, texture, hygiene, and taste. The “golden spurtle” refers to both the traditional Scottish utensil specifically designed for porridge-stirring, as well as the shape of the trophy awarded to winners.

What began as a tourism initiative in 1994 to attract winter crowds to the quaint, 700-person Scottish town has grown into an institution, drawing in hundreds of spectators and up to 30 competitors each year. “I read about it in the newspaper and thought that if this isn’t a joke and it’s for real, it’s the most silly and insane thing I ever heard,” says Saga Rickmer of Sweden. She signed up immediately, and went on to compete in the 2016 world championships and ultimately win the Swedish Porridge Competition, a national spinoff competition, in 2019.

This year, due to COVID-19, the competition will move online, with competitors submitting short video recipes and winners announced over social media on October 10 — World Porridge Day. But while the thrill of softening stodgy grains in real time might be missing, the weight of the endeavor seems to resonate more than ever. Anyone who has been cooking and recooking the same simple meals from pantry staples during the pandemic will understand the quest for the platonic ideal of gruel.

The 2020 competition will also be slightly different in that it will focus entirely on the specialty category, where pretty much anything goes. Competitors can add a bunch of milk, shape the oatmeal into tapas, brulee it, steam it, or bake it. Per Carlsson of Sweden snagged the 2017 specialty win with a cloudberry-liqueur porridge brulee. Neal Robertson from Scotland won in 2011 with a cinnamon and nutmeg-spiked porridge topped with a blueberry compote. Other wins have included a mushroom porridge torta in 2012 and a sticky toffee porridge in 2014.

Nick Barnard of London, a two-time winner in the specialty category, says the key to dressing up an award-winning dish is knowing what the judges like. “The Scots love sugar, salt, and fat,” he says. “So I’ll give it to them in spades.” Barnard won in 2019 with his maple pecan porridge, a mix of pecan butter, maple syrup, dry milk powder, and cream, all topped with pecans sauteed in ghee.

This year’s competition won’t include the traditional category, but normally competitors in this genre are required to make porridge with just three elements: oats, water, and salt. Minimally processed oats are a prerequisite precooked oats like instant and rolled oats are not allowed. Almost everyone who has won has used steel-cut oats and soaked the porridge overnight.

While it may seem simple by comparison, the challenge — and honestly, the fun — of the endeavor lies in elevating what’s widely recognized as an archetype of culinary austerity into something worth awarding a large spoon-shaped trophy to. Many home cooks believe all oatmeal tastes mostly the same, but it’s a point of pride for a porridge connoisseur to rise above this stereotype to make a truly distinguished bowl of oats.

“Many older people have grown up with this traditional, gloopy porridge and have a distaste for it,” says Carlsson, who also won the traditional category in 2018. “But I usually give them a sample of my porridge to try, and they say, ‘This isn’t porridge. This is something else!’” At his bed and breakfast in southern Sweden, Carlsson used to rotate porridge duties with two friends, and guests always complimented their meals on days when he cooked. Now Carlsson is behind the stove nearly every morning. A small corner of the dining room is also demurely decorated with porridge paraphernalia: a spurtle, a ladle, Swedish porridge merch and slogans, plus Carlsson’s own book of recipes.

Fans generally believe that the ideal oat porridge should be thick enough to offer some resistance, but smooth enough to go down easily. There should definitely be salt, but not enough to make you reach for a glass of water. It should be thick enough, but not at all watery. Not too much, and not too little. Not too cold, not too hot — just as Goldilocks would have it.

“It’s fascinating. In a competition, porridge is cooked 24 different ways, and they all taste different,” says Robertson, who has competed for a decade and occasionally judges at the Swedish Porridge Championship.

Competitors cook porridge every day for months, even years, to drill down the minutiae of the stuff. “You start preparing pretty much the day of the competition for the next year,” says Williams. Carlsson even recruited outside help from Dr. Viola Adamsson, a medical doctor and food nutritionist who has written several books on porridge and made porridge for the Swedish Olympic ski team in 1998 and 2002. “She practically has a doctorate in porridge,” jokes Carlsson’s wife, Catarina Arvidsson. Carlsson and Adamsson trained via Skype and telephone several times a week for a month, perfecting the water-to-oat ratio.

Among niche porridge circles, conversation often lands on four critical elements: oat-to-water ratio, type of oats, and salt. “One part oats to three parts water,” Williams insists. “Soak the oats overnight and use more salt than you think you would. I use Maldon sea salt — the same salt the queen uses.” Williams prefers half steel-cut oats and half stone-ground milled oats from Hamlyns of Scotland. “You get a nutty texture, but it’s not completely nutty. It’s more of a smooth nutty,” she says.

Robertson agrees on steel-cut oats from Hamlyns, but he does one part oatmeal to 2.5 parts water. “I tend to use sea salt,” he says. “It’s a bit softer and a bit more forgiving. And you should always stir it anti-clockwise. It keeps the devil at the bay.”

Carlsson does one part oats and 4.5 parts water. “I cook it for at least 25 minutes, then it is allowed to swell,” he says. Unlike Williams and Robertson, Carlson uses Swedish steel-cut oats from Saltå Kvarn, which are creamy but toasted for a “nice burned flavor,” he says.

In opting for Swedish oats, Carlson throws down the gauntlet in a nationalist sub-debate among porridge cooks. “Countries mill their oats in different ways,” says Anna Louise Batchelor, who won the specialty title in 2009. “Bob’s Red Mill [in America], they sell a really lovely rolled oat that’s very coarse. It’s very shiny and flat and it takes a long time to cook. Scotland loves their salty oats. And in Sweden, their milling is quite rustic.” Batchelor prefers coarse oats from English brand Mornflake.

Even the namesake spurtle is a topic of debate. Unlike spoons, spurtles allegedly don’t drag and prevent lumps. Many swear by them. “If you want to whip porridge in a pan without getting it all over yourself, the spurtle is the best tool,” says Barnard. “It brings air and stops it from overheating at the bottom of the pan and distributes the salt.” In 2016, Bob Moore, the founder of Bob’s Red Mill, won using a handcrafted myrtle spurtle from Oregon, where he lives.

Charlie Miller, the current organizer of the competition, says more eccentric attendees often bring specialty equipment too. Pressure cookers, microwaves, and bain-maries are commonly spotted in the competition hall. “Neal Robertson one year brought water that he claimed came from a stream that fed his local whisky distillery,” Miller recalls. In 2018, competitor Lynn Munro brought oatmeal she milled herself and cooked it with water she harvested from the loch at her childhood home. One woman even grew her own oats for the competition.

“Some people are so serious, it’s quite charming,” Barnard says. “The Swedish dress up like Swedish milkmaids and make a lot of noise. Some people have spreadsheets. It’s a circus, really.” But competitors are accepted into the fold regardless of skill. “I met one man at the competition who had never prepared a bowl of porridge in his life,” Miller says, laughing.

Robertson commemorated his 2010 win with a tattoo reading “World Porridge Champion 10.10.10,” rousing envy among friends and competitors. “Neal Robertson had [a tattoo] and walked around showing it off. Then I thought I should get one as well,” Carlsson says. Shortly after his own win, Carlsson shocked his children by getting his forearm inked with the words “World Champion” spiraling around a ladle.

But beneath the braggadocio and heated competition, the Golden Spurtle is, at its heart, about a bunch of people hanging out in a room cooking oatmeal. “It’s just the best time,” says Rickmer, who often visits her fellow Swede, Carlsson, as a guest chef at his bed and breakfast. “Competing in porridge is so cozy and cute. Everyone is so nerdy, which I love.”

Even this year, as competitors dive deep into their individual porridge pots, in their own kitchens, in their own countries thousands of miles apart, they are bound by a shared appreciation of well-cooked grains and what they symbolize. “It’s an ancestral food,” says Barnard. “All cultures around the world have a type of gruel.”

As with any competition, there are plenty of tears and laughter. “When I won, I was absolutely stunned. My face was bright red and I almost burst into tears,” Williams says, beaming as she holds up her trophy. She says she plans on going back to Scotland as soon as the competition is held in-person again, this time to add a specialty category win to her victory in the traditional category. “I have my china all picked out already.”

Dermatologists recommend oil cleansing, since they "are specially formulated to take away impurities in the skin while leaving a layer of moisturizing oils to prevent skin irritation," explains Dr. Tzu. To use, massage the formula onto your dry face and then rinse it off with several splashes of water.
