I had quite a few beans in the garden this year, so I decided to put them in the freezer for the winter, but also to dry some peas. For those who do not have a fruit / vegetable dryer, this method is ideal.

Take the healthy bean pods, wash them well and clean the ends. Take a larger pot and fill it with water (depending on the amount of beans you have) and then put it on the fire.
When the water starts to boil, put the pods in the bowl.

They are ready when their texture is brittle.

For their use in winter, the pods are put in warm water from evening to morning. During this time they rehydrate and we can use it as a fresh bean pod.

Store in paper bags or canvas bags in a dark and dry place.

If you store dry pods in damp places they tend to absorb moisture from the air and can mold.

Peel a squash, grate it and break it into two or three pieces (depending on how long the pod is). Wash well in 2-3 waters.

Peel an onion and cut it into cubes. Tomatoes are scalded, peeled and diced. Wash the peppers, remove the seeds and cut them into cubes.

In a large pot, put half the amount of beans, add half the onion, pepper and tomatoes, and repeat the operation with the remaining ingredients.

Add water to almost the same level as the ingredients and bring to a simmer until it starts to boil. Reduce the heat and let the lid simmer.

Meanwhile, stir from time to time with a spatula lightly turning over so as not to crush the beans. When the beans are half cooked, add enough salt to be a little more salty than usual.

The cooking time differs from one type of bean to another. The beans I had are harder to boil. It lasted about 2 and a half hours.

When the beans are cooked, turn off the heat and add the finely chopped parsley and celery. Mix lightly. After it has cooled, place the beans in jars and fill the jars with the water in which it boiled. Dust (from the moment the water boils for about an hour). Leave the jars in the water until the next day, after which they are labeled and placed in the pantry.


Green bean zacusca

Ingredients

  • 1.5 kg green beans
  • 5-6 onions (750 g)
  • 5-6 carrots (750 g)
  • 1.5 kg bell peppers, capsicums or donuts
  • 1 l of thick tomato juice
  • salt and pepper as desired
  • 150 ml oil
  • a few celery leaves
  • 1 bay leaf (optional).

Method of preparation

Bake the peppers or donuts, peel them and let them drain in a colander. Then chop finely or pass through a mincer using a sieve with large holes.

Onions cleaned and cut into small pieces, boil for a few minutes on steam or scald with hot water, then drain. It is a practical way to avoid cutting onions, which is quite unpleasant due to the sting of onions.

After it has cooled, the onion is passed through the mincer using a sieve with small holes. Peel a squash, grate it and squeeze the juice. The beans are cleaned of stalks and tips, then cut into small pieces. Put the chopped onion and carrots in a saucepan with the oil and mix over medium heat for about 5 minutes.

Then add the beans and stir from time to time until the beans change color. Then add the chopped peppers, tomato juice, salt and pepper, then continue cooking. Continue to simmer until the composition reaches the desired consistency, stirring constantly so that the vegetable paste does not stick to the bottom of the pot.

When ready, the zacusca is placed directly in clean and dry jars, which are then sterilized by placing them in a tray with hot water and leave in the oven for 20-30 minutes.

Remove from the oven, put the lids on and cover well with several blankets. The jars are left covered until the next day, after which they are transferred to the pantry.
