Donuts for glutinous gluttons

Simple donuts are good, but glazed ones will turn your dessert into a more special one. I have a few options for you to decorate ... with white or dark chocolate, with coconut flakes or meringues, but the truth is that you can play as much as you want.

For the dough:

  • 140 ml of warm milk
  • 14-15g of dry yeast
  • 475 g of quality flour plus extra for the worktop
  • ½ teaspoon of nutmeg
  • 1 teaspoon cinnamon
  • 90 g old powder
  • 2 sachets of vanilla bourbon sugar
  • 90 g of butter 82% fat, unsalted, at room temperature
  • 2 eggs
  • grated peel from an orange
  • oil for greasing the dough but also for frying
  • 1 pinch of salt

For the glaze:

  • several types of chocolate
  • coconut flakes
  • chocolate flakes
  • decorative candies
  • jam or meringue

Servings: 22

Preparation time: less than 120 minutes

RECIPE PREPARATION Donuts for glazed appetizers:

ASS 1: Dissolution of the yeast


Heat the milk a little on the fire and dissolve the yeast and bourbon vanilla sugar in it. Leave it warm for about 5-10 minutes until it starts to swell.

STEP 2: Mix the dry ingredients


Sift the flour into a large bowl. Sift the powdered sugar on top and add salt, cinnamon and nutmeg. Mix everything well.

STEP 3: Mix the dry ingredients with the wet ones


Put the yeast dissolved in milk on top and add the 2 eggs together with the orange peel. Start kneading, and in the middle of the process incorporate the butter.

STEP 4: kneading


When the dough has set, take it out of the bowl and place it on the work table, previously powdered with flour. Knead for about 10-15 minutes.

Baked Donuts With Strawberry Glaze

1. Preheat the oven to 200C. Spray a tray with cooking spray.

2. In a large bowl, mix together the flour, sugar, baking powder, baking soda and salt. In a small bowl, mix egg, yogurt, oil and lemon juice. Make a hole in the center of the dry ingredients and pour the wet ingredients. Add chopped strawberries. Mix the ingredients until smooth. The dough will be thick.

2. Pour the dough into a bag and cut a corner with scissors. Pour the dough into the pan, in the shape of American donuts, with the hole in the center.

3. Bake for 10 minutes or until golden. Allow to cool completely.

4. For the icing, mix all the ingredients in a bowl with a whisk until smooth. Pass each donut through the glaze. Place on a wire rack to drain any excess glaze. Allow to cool for 15 minutes before serving.

About products fried in an oil bath

Don't panic when you hear about the "oil bath" because if it is properly prepared (correct temperature and large enough oil volume) the fried products will NOT soak in oil! They should float in this oil bath, not sit on the bottom of the pan. This is true for both donuts and schnitzels or breaded vegetables, tempura, languid or other fried pastries (little lies, cirighele, networks etc). Insufficient or insufficiently heated oil is responsible for soaking the fried products with it. Because I recommend using a quality fryer equipped with thermostat, sufficiently large tub and basket for handling and draining of fried foods.

No one said we should eat fried foods every day, especially fried sweets! Temperance is the best way but if you ever feel like donuts or donuts then do them as per the book! It's really not worth making fun of them by trying to bake them in the oven. Their flavor will not be the same.


Delicious donuts. Simple or with orange glaze

Since I was asked how I prepare the donuts, I thought I would not delay and present you the recipe. I use the classic donut recipe. Sometimes I deviate, but I also go back to the ones I remember from my childhood.

Donuts are Maia's favorites, but we also like them very much. I can't say I do them very often, because they take quite a long time, and Albert isn't always willing to let me see mine in the kitchen for too long.


Ingredients for the fluffy donut recipe

  • 500 g flour
  • 250 ml of milk
  • 50 g melted butter
  • 40 g sugar
  • 10 g dry yeast
  • 2 eggs
  • 1 yolk
  • Vanilla essence (optional)
  • Grated lemon peel
  • orange peel
  • A teaspoon of salt

Preparation for the Fluffy Donuts recipe, simple, traditional, step by step recipe

Donut dough

Put warm milk, sugar and dry yeast in a bowl. Mix with a whisk (or spoon) until the sugar has melted and the yeast has dissolved. Leave it for 10 minutes, when it started to froth on top (sign that the yeast is in action), add eggs + egg yolk (beaten a little with a fork), melted and cooled butter, lemon peel.

Mix a little then add sifted flour.
Homogenize everything with a spoon for about 10-15 minutes (the dough will be sticky, so it should be, no more flour is added).
Cover the bowl with foil and leave to rise for 40 minutes in a warm place.
Meanwhile, cut baking paper into square pieces and grease with oil.
After the dough has risen, grease your hands with oil (the dough will be sticky) and form balls as big as you want, put them on the baking sheets and flatten them a little.
Leave to rise for 20 minutes.
In a frying pan, put oil to heat and put the donuts lightly until they come off the paper, fry them over the right heat, always turning them from one side to the other until they turn brown.
Remove on kitchen paper to absorb excess oil.
Powder with sugar when cooled slightly.

The oil must have a constant temperature. If it is too hot, it will burn on top and will remain raw inside.
And & hellip if the fire is too weak & hellipabsorb too much oil and they will come out oily.
The donuts can be made without a hole in the middle, they can be filled with vanilla cream, chocolate, jam ... etc.
I sometimes mix sugar with cinnamon & hellip. They have a special aroma.
The dough can also be made with a food processor.

The average of the grades given by the jury for this recipe is 10.

my luck was that I tripled the quantities! Otherwise I think I had to get tired only of the smell! I had guests and in two hours the plate was empty! SUPERRRR!

yes, that's how the dough should be, softer.

the dough comes out a little thicker than mayonnaise. therefore it is formed with a teaspoon, it is taken on a teaspoon and it is let fall in the hot oil. but the dough is not so soft as to fall off the teaspoon alone, it must be pushed by hand. Is that how it turned out for you?

Hi, Ioana!
I also tried your recipe for quick donuts and they tasted very good. Unfortunately, they didn't come out as swollen as in the picture, but flattened, like glues, and I don't know why. Should I have fried them in more oil? Or should I have left them to ferment for a while?

Corina, the only thing I'm thinking about is that your dough came out a little soft. when you aim for it, the traces must remain visible

either your egg was a huge one, or the flour was to blame. I guess you put baking powder, you didn't forget about it. next time try the dough and if it is too soft add a little more flour

Besides the others, I made the donuts very fast! They turned out super good and very fast, I don't even know when I finished them! You should know, dear Ioana, that when I think I like something, 2 servings, that's what I did now! I'll remember the recipe! Especially because it's fast! indeed they are very good. for me they are the dessert or the sweetest that is made the fastest when someone is at your place and you have nothing to eat with it. You must have yogurt at home, not to mention eggs and everything else. so you give beats.

The most delicious donuts! I always liked the round ones, and with such a quick recipe, the better I just finished making them, only I didn't have yogurt and vanilla, and I replaced them with sour cream + a drop of milk, respectively, maple essence. they are fluffy anyway, for the final verdict, I'm waiting for my husband to come fishing.

They are very tasty and easy to prepare, but I had a problem. What do I do with the "threads" of dough? Didn't I put enough flour and that's why they came out with "moate"? They all ate!

it depends on how big the wires were. if you look at the second picture in detail, and mine are slightly deformed, some have moats. if yours were bigger it means that the dough was too soft an idea. maybe because of the bigger egg or the waterier yogurt.

I did in the end. but it seems that at 14 I am not very experienced. . I don't know which part of the recipe I didn't follow, but something wasn't the same because my donuts turned out differently: | . the idea is that they were a bit full of oil and I had a stomach ache. good luck with redigest.

my donuts came out too. but they seem to be a little raw in the middle, and if I leave them more to fry, they burn a bit hard ... they turn black. It's the first time I make donuts, did I do something wrong? The dough came out good.

the dough was a little too soft, next time put less yogurt than it is in the recipe. the dough should not be very soft, to sit on the teaspoon

I kept reading the donut recipe many times, but I never had the courage to prepare them, I thought I would not fail. today I set out to try, said and done. I can't believe they succeeded, they were so beautiful and tasty, they were eaten immediately. I order that next time I double the composition.

Well I do not know. I made them too, but at the fire I didn't find them inside. and more slowly they came out a little more flattened and not nicely swollen and there was dough inside. I mean, it wasn't like those normal donuts didn't have that much core inside. I did not put vanilla sugar as the essence. I don't know why they came out so the taste is good

I just finished eating the donuts, really tasty and easy to make. I did not encounter any problems with the composition and they swelled when fried.

Hi girls! Oh and let's not forget the "cute" who said that: "I'm not good at anything, the recipe is not good, it's a shame if you start throwing everything in the trash" Poor thing. Finally, I used sour cream instead of yogurt, because I didn't have it, they swelled like crazy, if they didn't want to sit on the right side, they kept rolling! But I forgave them the moment I tasted them! wow! super fluffy, ripe, absolutely no problem! 35 pcs came out. but maybe I made them small. I mention, I have never made donuts in my life! Super! They are delicious! Just yesterday I made them and they are amazing, but not all of them were made inside me and I don't realize where I'm wrong because often the dough is not made on the inside. Maybe you can help me in this sense. Thanks for this recipe!

the first thing you can do is make them smaller, take less dough per teaspoon. and then lower the heat a little under the pan after the oil is well heated, just before the donuts form in the oil.

The donuts turned out super good. They are so soft and fluffy I put sour cream instead of yogurt and some vanilla essence and grated lemon peel. Congratulations on the recipe, I had a craving for donuts for a long time and your recipe saved me.

trick: in order for them to come out almost perfectly round, you have to throw hot oil over them, possibly with a spoon, but not immediately as soon as you have poured them with a spoon or teaspoon into the pan, but after about 10 sec. because otherwise they will spread (like when you make stitched eggs) and only after that you turn them on the other side. however, you must move quickly because they cook quickly and their color must not be further from golden yellow. It is recommended to leave the composition in the fridge for 1/2 hour for rest and then start baking. I hope I came with some useful advice and Ioana will not be upset. they are delicious anyway.

Hi! I made them twice: the first time this summer, when they came out delicious, as in the picture, but the second time they came out full of oil and flat. I can't believe I failed a second time. I don't realize what I didn't do well.

doolce, the powder is activated when it comes in contact with the yogurt, so it does not have to be "extinguished" with anything.

nico, the fact that they are flat and full of oil makes me think only that the oil was not well heated (then I absorb oil) or that the dough was too soft. maybe you used another yogurt, which was more watery, didn't you notice any difference in this respect compared to the first time?

they should not come out oily, that is, no more than normal donuts, as they are ultimately fried in oil. but very oily it only makes me think that it was unheated oil, then the dough starts to absorb oil before making the crust on top.

Now I'm done. The last ones didn't grow much for me, I think it's because I was a bit stingy with oil. Anyway, congratulations! Very good! Something like that my mother used to do to me when I was little when I was preparing for kindergarten. Delicious!

I did but they didn't grow the same way I think the dough was too soft. when I saw that it didn't work out I put some more milk and made pancakes that came out very good

I had been craving them for about a week and horror: they remained raw inside, so I put the fire smaller, and smaller, very small, oil heated well and in vain, I also put flour on low heat, very well browned by they came out a dark brown almost burnt, I made them long, small, I flattened them with a spoon and finally in the center hmmmm like a raw pancake.

Hi, I tried twice to make the donuts, respecting the recipe. Maybe the first time they failed because I left the dough about half an hour before I started the donuts, but the second time I don't know what the problem was. I have only one piece of advice: don't deviate from the recipe because you will give kicks.

I made some with a teaspoon and then I said to make with a spoon but they did not bake well inside

the donuts are formed with a teaspoon because they have to come out small, but this is also specified in the recipe. the oil must be heated very hard at the beginning (so that your oily donuts do not come out), but you turn the fire to the minimum when you start to form the donuts in it, so that it has time to be done inside as well.

If you want something more interesting: after frying them, pass the donuts in a bowl with honey (in larger quantities) heated over low heat.
Remove the foamer.
In this case they are called LUCUMADES (Greek recipes), they are very filling and tasty.

I did it tonight and unfortunately some of them were cruel in the middle. I like the ffff recipe a lot and they are very tasty. I spooned because I wasn't careful. I fried them once more and they were ok. I'm sure I'll do more. I live in the US and the yogurt is different here, but they turned out good. I used Greek honey yogurt and it tasted sweeter. I want to tell you that by chance I came across the recipe, in fact I was looking to make something sweet quickly for my 4 year old daughter. I also prepared the donuts and they were super good, especially since I had a craving and I didn't have much time to knead the coca and wait for it to rise.
I really experimented a bit and I'm very proud of what came out of it. I made more composition and half of it I fried in a Teflon pan greased with a drop of oil (like pancakes) and I got some delicious pancakes. This way I made an almost oil-free dessert

If you respect everything written here, I come out very well. It matters how hot the fire is, how hot the oil is. was the oil hot when you fried them? usually then I absorb oil. when you fry these donuts or something similar you have to do as when you fry the snits: when you put the oil on them it is super hot to seal on top, then lower the heat so that it can be done inside. that's about the technique.

I just made them, it's great to be able to eat donuts when you feel like it, without having to wait at least 1 hour for the dough to rise. and another one with kneading, cutting, etc. I got 32 (of which I already ate 10, so, out of breath) and I followed exactly the recipe, I even used the scale I think there is no need for more or less, it's good that way. The first recipe I made on your site, Ioana.
Being Saint Nicholas, today I made a discount from fasting. I also chose the holiday menu..all the recipes on this site..study that everything will turn out superbly because from the first I resonated fff well with the recipes and your style.

This recipe is a dream come true. Especially since I prefer the compositions made on the phone, as they are lighter than the kneaded doughs (which, anyway, I have no idea are "wood" in this regard). The only nostalgia for the kneaded dough was for the cake and donuts. Now it's done with the donuts.
I mean, they come out fff fine, fluffy and much lighter than the classic ones.

I put only 1 tablespoon of sugar in the composition, because I invented a icing instead of powdered sugar. I glazed the donuts with it, then rolled them through the grated coconut. A total madness came out!

Here is the icing recipe here:
-bee honey 4 tbsp
-flat water for liquefying a little honey..about 2-4 teaspoons (depending on how thick the honey you have it) .. anyway it comes out neither too bound nor liquid..something in the middle
-cinnamon powder 1/4 teaspoon
-cocoa given through a sieve (so as not to make lumps) 1 teaspoon
- rum essence a few drops .. according to everyone's taste .. anyway it evaporates from it along the way

Aside, in a deep, square plate, I spread a layer about 1 finger thick of grated coconut to coat the donuts given through the icing.

For the icing, I mix all the ingredients in a medium-sized bowl ... I used a bowl with a handle from which I eat soup. I prepared the icing first and only after the donuts.

I take 1 donut at a time, release it completely in the bowl with the glaze, turn it on all sides, take it out separately on a flat plate. Dress 4-5 (no more because the icing dries and the coconut polish doesn't stick), then transfer them to the coconut plate and roll them well ... I used a spoon to squeeze the fish. Then put them in a glass bowl with a lid ... to be hermetically sealed in the refrigerator.

Basically these donuts have 2 layers: one of icing, another of coconut. They came out fluffy, and light, and good-looking, and interesting, and exotic..and..and..and divine.

Absolutely delicious, very easy and quick to make! I just finished eating them.
I had read the comments before and now that I made them I was thinking what could be the cause of those that did not come out, I read comments that they were immature, that they did not grow, etc. but they seemed so simple to me to do. it's true that I made 2 servings from the start and I put 350 gr of flour, otherwise I followed the recipe step by step.
I think that for those who did not come out or the yogurt was not suitable: it must be thick yogurt, consistent, creamy, not drinkable or they put too little baking powder or they extinguished it before or it is simply not good (baking powder).

I wanted to thank you for the recipe. It's absolutely delicious. I ate the donuts in a bistro right there in Vlach and they stuck in my heart but I didn't know the recipe. I made them (11 times so far) with 6% fatty yogurt from Napolact or the Greek one and in the last times I put 1 teaspoon of baking soda (because I ran out of baking powder) and they had a much better texture. I dripped them in abundance with finesse or rosehip jam.
It is a recipe for everyone's taste, especially for the little ones who don't stop eating. A culinary delight.
