Last Christmas, my brother-in-law gave everyone in the family a jar of his homemade BBQ seasoning. It's great to use on chicken, beef, fish and even vegetables.

IngredientsMakes: 50 grams (approx.)
- 1 teaspoon garlic granules
- 1 teaspoon onion powder
- 1 teaspoon freshly ground black pepper
- 1 teaspoon dried ground sage
- 1 teaspoon dried ground oregano
- cayenne pepper (to taste)
- 1 teaspoon sweet paprika
- 1 teaspoon celery salt
- 1 teaspoon dried ground rosemary
- chilli powder (to taste)
- salt (according to taste)
- 1 teaspoon dried ground thyme
- 1 teaspoon ground cumin

- Mix all the ingredients and store in a jar or airtight container.
Mix the seasoning with a few tablespoons of olive oil, rub onto meat and allow to marinade for a few hours for loads of flavour.

You really do not need to add the oil. Simply rub with a little of this and let it sit. Barbecue, cook in the oven or whatever. Rubs are great !-02 Dec 2011(Review from this site AU | NZ)
Texas BBQ Chip Seasoning
Make your own homemade BBQ Chips! This simple throw together seasoning offers lots of flavor and is great on homemade fried or baked potato chips.
First, you’ll need a batch of freshly made potato chips, whether they’re baked , fried or otherwise.
2 tbsp Light Brown Sugar
1 tbsp White Sugar
1 tbsp Kosher Salt
1/2 tsp Smoked Paprika
1/2 tsp Garlic Powder
1/4 tsp Onion Powder
Mustard Powder (to taste)*
Chili Powder (to taste) *
Measure all of the ingredients into a 1 gallon zipclose bag, seal and shake to completely combine them. Then, open the bag, add your freshly made chips, seal the bag, shake gently to coat the chips.
Remove the chips from the bag and enjoy.
* We generally don’t measure the mustard or chili powder, just give them each a quick dash.

If you are making a large batch of the Taco Seasoning, store it in an airtight container. I love to use these glass jars for storage. Ground spices usually last for 6 months. After that they will start to lose their flavor. I check this by giving the jar a whiff. If the smell is still potent it&rsquos probably still good.

Barbecue rubs are so easy to make, and very easy to customize. If you want this one a little spicier, you can increase the cayenne pepper in the mix.

- Brown sugar – Dark or light. Granulated sugar can be used as well.
- Smoked paprika – While you can substitute regular paprika, I highly recommend using smoked.
- Salt & pepper – Season to taste.
- Chili powder – Any type you like best. Give this homemade recipe a try!
- Onion powder – If you use dehydrated onion, double the amount called for.
- Garlic powder – Use more or less as you prefer.
- Cayenne – This is for some heat. You can use more, less, or none at all.
- Dry mustard – This will add a bit of tang. You can use less if you don’t love mustard.

Neely's Barbecue Seasoning
In the South, we have a tradition of ushering recipes from era to era and family to family. Secret sauces are passed down from generation to generation. That's certainly the case here. Our Barbecue Seasoning and Barbecue Sauce have evolved over time, and the versions that follow have benefited from the contributions of countless kin through the years.
Now that we are passing our family secrets along to you, it's your job to share them with others. We enjoy changing up recipes ans seeing what happens, and we encourage you to do the same. Who knows? You may come up with a secret sauce or rub that's better than our own!
Of course, the keys to full-flavored barbecue—indeed, one of the keys to any great-tasting dish—are fresh ingredients and spices. Don't be reaching in the back of the cupboard for some tired old tin of paprika. You want great ribs? Start with fresh spices.
Everyone down South knows that a good grill seasoning (or "dry rub," as it's called in Memphis) begins with paprika. We use the basic paprika that is not labeled "sweet" or "hot." The flavor is subtly sweet, rich, and yet mild, so it blends beautifully with grilled meats. Sugar and onion powder provide a sweet and savory counterpoint.
Keep in mind that you will be cooking over charcoal and hickory (or your preferred wood), which will add tremendous flavor to the meat. For that reason, this seasoning blend is fairly simple and straightforward.
For the best flavor, marinate the spice-rubbed meats overnight in the refrigerator, so they can absorb and "breathe in" the flavors.
1. Take out a medium-size saucepan and add into it the soy sauce, 1/2 cup of brown sugar, distilled mineral water, and molasses. Bring these ingredients to a boil, while stirring the spice mixture together frequently. Once a boil has been reached set the pan aside to cool down to room temperature.
2. Generously rub the entire surface area of the pork ribs with the Butt Rub Barbeque Seasoning blend. Be sure that you cover the bone and fat portions as well. Once the ribs have been seasoned, place them into a sealable baking bag. Pour your saucepan ingredients over the ribs in the bag and seal it tightly. Place the bag into the refrigerator so that the ribs can marinate for 4-6 hours, occasionally turning the bag over so that the ribs are able to evenly soak up the flavors.
3. Preheat your oven to 375 degrees Fahrenheit or 190 degrees Celsius.
4. Once marinated, remove any excess marinade liquids from the baking bag. Next, cut four long slits in the top of the bag for better airflow. Place the bag into a baking pan and completely cover the top of it with tinfoil. Let the ribs bake for 2 full hours at the aforementioned heat setting.
5. To make your rib bbq sauce, add all of the sauce ingredients to a medium size saucepan and heat it over medium heat. Bring the contents to a boil while stirring the sauce frequently. Once the rib sauce is smooth and consistent you can remove it from the stove top. It is advisable to conduct this step while your ribs are baking in the oven.
6. Once your ribs are tender and juicy you can remove them from the baking bag. Handle the hot ribs with a strong pair of metal BBQ tongs. Lower your oven temperature to 350 degrees Fahrenheit or 175 degrees Celsius.
7. Brush your rib sauce on the meat rack, making sure that you completely cover the entire surface area of the meat. Once the sauce has been applied to the ribs, set them back into your baking pan. This time do not use a baking bag, as you want your ribs to cook uncovered. Slide them into the oven and allow them to cook for 30-45 minutes. Once they are done, place them under the broiler in order to char the ribs a bit.
Pro Tip - In order to ensure that this recipe has the absolute best flavor possible, be sure not to skip the marination process. It is strongly recommended that you allow your ribs to marinate for the full 6 hours, as it takes time for the pork meat to open up and accept all of the seasonings and sauces. Not marinating your ribs will likely result in much of the delicious flavor burning off in the oven during the cooking process. The end result will be ribs with a much less delicious flavor than they would otherwise have. So please, take the time to marinate your ribs for a lengthy period of time and you absolutely will not regret doing so.
