Boil the milk together with the sugar. When it starts to boil, put the semolina in the milk while mixing with a whisk. The gray obtained must be a little thicker, so put more semolina. We let it boil on the fire, then we stop and pull the pan aside.

In another pan put the breadcrumbs, brown sugar and vanilla sugar and let it simmer, stirring occasionally, until hot, but not to melt the sugar.

I put the breadcrumbs in a deeper bowl so that I don't burn the pan. From the semolina, after it had cooled down a bit, enough not to burn our hands, we formed small balls, like raffaelo, which we removed orin breadcrumbs.

Place the breadcrumbs on a plate, sprinkling breadcrumbs over them.

It can be served hot and cold.

Homemade semolina pasta. Simple and Fast

We need:
• 130 gr gray, 1 or
• 1 tablespoon sunflower oil
• Salt (to taste)
• Wheat flour (if necessary)

How to prepare wheat semolina pasta?

We will start by beating the egg with a pinch of salt. In the bowl of semolina pour a tablespoon of sunflower oil. Then add the beaten egg and knead the dough from the outside to the center, until it becomes smooth.

The dough should be quite dense. Form a ball of dough, wrap it in a food foil (or we can put it in a bowl) and leave it aside for 30-40 minutes. Then spread the dough into a very thin sheet. If it sticks, add a little wheat flour.

Cut the dough into thin strips and let them dry for about 30 minutes. Then boil the pasta in boiling water for 3 minutes. We can combine them with vegetables or put them in soup instead of noodles. Semolina pasta is easy to prepare. It is enough to prepare your semolina pasta at home once, to give up the commercial ones.

Even when you make soup or broth you will use homemade wheat semolina pasta, because they are much tastier than those bought in the store. Good appetite and increase cooking!

4. Add the yogurt and mix well.
5. Add the butter and mix to blend.
6. Add the semolina mixed with the baking powder. Homogenize.
7. Grease a pan well with butter. Pour the composition and level.
Bake at 180 degrees for about 45 minutes. After the first 20 minutes, reduce to 170 degrees. It is ready when browned on the edges.
Take out the tray and portion into squares.
8. Spread the syrup evenly on the hot cake, sprinkle half of the coconut and let it absorb. After complete cooling, sprinkle with the rest of the coconut.
You can sprinkle pistachios, or stick a whole peeled pistachio seed in the middle of the portion.

Balls of semolina and coconut - recipe

• 170 g of semolina
• 1 liter of vegetable milk
• 150 g of raisins and / or

Boil the milk together with the vanilla. After it starts to boil, add the semolina in the rain and mix well with the whisk. Add the finely chopped raisins and dates.

Stir and simmer for another quarter of an hour, stirring constantly. After the semolina has boiled and swelled, take the pot off the heat and add the coconut, stirring until smooth.

Leave the semolina to cool, then add the coarsely crushed walnuts or almonds and the honey. Mix well, shape with your hands balls the size of nuts, leveling them nicely between the palms.

At the end they are given through coconut, or ground walnut. Place on a plate or put in a saucepan and refrigerate. Leave to cool until hardened, at least 2 hours, preferably overnight.
Must be consumed within 2 days.

NoCarb semolina pudding, sweetened with Green Sugar

I have this recipe from a keto group on Facebook, a community with nice people, where you can find answers to many questions in the field, as well as inspiration for cooking.
I used to have a NoCarb semolina envelope, from a previous order from the NoSugarShop online store. I didn't know what use to give it until I found the pudding recipe. I got a mega pudding, I gave a part of it, because I could not cope with the amount.
NoCarb-free semolina is a mixture of cellulose, xanthan gum and konjac flour. It looks like semolina and can be used in classic recipes where wheat semolina is required. I can honestly say that this is the first recipe I use, but I understand that dumplings can be made for soup. I will test other recipes along the way, and I will post the positive results on the blog.

I did the sweetening, as usual, with Green Sugar, the sweetener with zero calories and zero glycemic index. Although I recently received a package from the manufacturer, I have been successfully using this sweetener for over 2 years. I like that it behaves exemplary in heat treatment, the taste is almost identical to that of sugar (I also feel a hint of menthol, from the erythritol in the composition, but I do not mind). What I also like is that it is not addictive for people who follow a keto / low-carb lifestyle. When I was consuming sugar, I remember very well the feeling of lust that the taste of a dessert sweetened with sugar aroused in me. I wanted to eat more and more of it, I could hardly stop. Now, however, it is enough to consume a moderate portion of dessert sweetened with Green Sugar, and not daily, without feeling the unbridled desire to taste again and again.

To reduce (and further) the amount of carbohydrates, use unsalted curd instead of sweet cottage cheese.

  • 10 eggs, separated
  • 150 g Green Sugar
  • 500 g of cottage cheese or unsalted curd
  • 1 sachet of 60 g NoCarb carbohydrate-free semolina
  • 350 g fat fermented cream

Whisk the egg whites with a pinch of salt. Separately, beat the yolks with the sweetener and cream (which I forgot to take), then add the crushed curd and NoCarb semolina. After adding the semolina, the composition will harden considerably quite quickly. Start gradually incorporating the beaten egg whites, using a pear. In the end, a fairly thick composition must come out. Pour the dough into a tray lined with baking paper and level.

Bake the pudding for about 45-60 minutes at 170 degrees C, or until the surface is browned. Cut and serve after it has cooled.
